We went for a 5 years old girl’s birthday party yesterday, her mother prepared all that great food and I realised how many delicious breakfasts are in front of me. Since I haven’t eaten bread for a while, here comes one with it.
What you will need:
- 1 ciabatta roll, toasted
- ½ cup of a smoked salmon
- 2 tablespoons unsalted butter
- 2 tablespoons pure maple syrup
- 1 tbsp brown sugar
- butter for frying the eggs
- 1 egg
- salt and pepper
The base of this recipe is salmon cooked in a maple syrup, so melt 2 tbsp of butter in a small pot over medium heat, add the maple syrup and brown sugar. When all the ingredients dissolve, add the smoked salmon and continue cooking until the glaze reduces and is thickened (5-6 minutes). Don’t forget to stir.
Meanwhile, in a separate frying pan, melt butter and fry the egg on it (the yolks should be runny).
Place the smoked salmon mixture on ciabatta roll, top with one egg, and cover with the other half of the ciabatta roll.
