From last moment – buying a camper van is a b..tch!
I’ll start with writing that these cinnamon sugar french toasts are the best present you can make to yourself in the morning. It is so good, that you will cry out of happiness and curse me for not sharing it earlier. To be totally frank, I curse myself for not discovering it earlier. Damn you Internet, why did you hide it for so long! Because it’s not my recipe, no no no, it is all Chungah from Damn Delicious making. This girl rocked my three mornings already. I am in love with these toasts.
From last moment – buying a camper van is a b..tch! Going back to the beginning – I always wanted to go to Scandinavia. ALWAYS! But it’s an expensive adventure and I never knew how to organise it. A few weeks ago my friend sent me an audiobook “4h week work” and after about 1h or listening I figured out, that I just have to do it. I’ve decided to buy a van, pack Mia, say bye bye to Tomasz (he will be joining from time to time) and start our journey into fiords directions. I googled pretty views, routes, permissions, even toll fees. And then the reality caught up with me, because as I said at the beginning, buying a van is a bi…! I want it to be in my price range, read pretty cheap, and not to stop in the middle of nowhere. My father knows everything about fixing cars, but apparently it does not go with genes or blood or however it could. In the end, I know how to change a wheel and start a battery and that’s it. So not too much. During the past weeks I read a lot and even drove a couple of hours to check on one van. To make this long and frustrating story short – still no van, as buying a van is a bi……h. Now I feel slightly better and I can go back to my search. Have a lovely weekend folks!
You will need for toasts (for 4-5):
- 2 eggs
- ½ cup milk
- pinch of nutmeg
- 5 slices of white fluffy loaf
- butter for frying
For cinnamon sugar:
- ¼ cup white sugar
- 2 tbsp brown sugar
- 1 tsp cinnamon
For a glaze::
- 2 tbsp cream cheese
- 2 tbsp sugar
- 2 tbsp milk
Once again – super easy. Start with making the glaze. To do so, place all the ingredients in a small bowl and mix.
In another flat plate, mix sugars and cinnamon.
In a soup plate mix eggs, milk and nutmeg.
Heat a frying pan over a medium-high heat and melt 1 tbsp butter. Place each slice of bread in the egg mix and coat it on both sides. Fry on both sides until golden – around 2 minutes. Move toast from the pan to the sugar plate and coat well. Do the same with the rest of the slices.
Serve with cream cheese glaze and fruits.
The next day do it again. Maybe the following day as well 😀

It’s kind of relaxing to read about someone else’s struggles, especially when they sound like exactly the kind of struggles you are facing. 🙂 I’m trying to buy a 4×4 for a trip and it couldn’t be more frustrating. For A, I know NOTHING about cars, for B my budget is very limited. I’m so happy you found your van in the end, and can’t wait to follow you amazing trip! The cream cheese glaze for the french toast – it’s a new idea for me and I’m very curious to try it out (and wow so easy, I can do this in the morning!). I’m very intrigued to try that and replace with our regular maple syrup. My french toast loving daughter will love this for sure, guarantee. 😉 Thanks for the recipe in advance!

I so agree. I wanted to buy 50 years old Mercedes, it looked so beautiful, but it would be too difficult for me unfortunately. And yesterday I finally bought a van! I am so happy 😀
This looks pretty darn good!!!! A friend of my husband’s wanted to buy a camper van to travel around Europe and he had a VERY hard time finding one in roughly good condition that didn’t break the bank. But he made it, and I know you will get one too, because I honestly cannot wait to read your travels through Scandinavia which is also a dream for me – especially Finland, I soooo want to live your travels vicariously if you make it to Finland!!

Oh my gosh we are drooooooling! Your photos look amazing, your photogrpahy skills are incredible and the food looks delicious! We have got into a habit of always eating pancakes but you have inspired us to try french toast, we love love cinnamon so these are right up our street! Thank you for inspiring us!
