Clafoutis with Gooseberries and Blueberries

Home sweet home. Few days ago I’ve been having a perfect girls fun in Sopot, enjoying each moment of a great company, sun changing into rain, beach, Picollo and our amazing room. We had a view on a sea and I could stay on a balcony for whole 4 days. And now I’m back in my kitchen, preparing breakfast for Tomasz and trying to figure out where did this 4 days go. They say that time passes fast when you have fun, unfortunately too fast when you have a lot of fun.

We didn’t eat clafoutis for a long time. Do you remember the chocolate one I made last year? I’ve been thinking about it for a couple of days after I saw a beautiful picture of one on Pinterest. I twisted it just a little bit, so it will have a fresh flavour. While you bake it, it will grow and almost leave a baking form but don’t worry, it will descend after you take it out of an oven.

You will need:

  • 3 eggs
  • ¾ cup flour
  • 2 tbsp honey
  • 1 & ¼ cup of milk
  • 1 tsp vanilla extract
  • zest from 1 orange
  • pinch of salt
  • 1 cup of gooseberries and blueberries
  • butter to grease a baking form

Mix all ingredients except for fruits and butter in a bowl. Grease a baking form with butter and place fruits on a bottom. Pour mixed ingredients on it, place in an oven and bake in 180*C for about 1 hour.

Serve with a caster sugar.

    this recipe is so easy and so tasty! i just finished eating a hot piece now. i used frozen berries and dusted with granulated sugar instead of powdered since that’s what I had onhand but it was still lovely. thank you!
