Let’s be honest, I wasn’t too active on a blog lately. Everything because I had too much work (I know that it’s a lame excuse). In the morning I was more eager to use prooven recipes than to experiment with new ones. I have some more time on my hands now and I want to change it, so let’s eat some good breakfasts together! I am still fighting with a sleep deprivation so I need caffeine and I figured out I could add some to my breakfast as well (in a moment more caffeine in my veins equals better). That’s why today’s proposition should be obvious – coffee crepes. Crepes are quite popular in my country and it was the only thing I could do for a long time (thank you grandma!).
Also one of my dear readers reminded me that 5 years ago, on my travel blog I wrote that I can’t and will not cook because it always ends up as a disaster. Life changes 🙂
If you don’t have espresso, you can replace it with 2 tsp of an instant coffee that you mix with milk.
You will need:
- 3 tbsp espresso
- ½ cup of milk
- 1/3 cup of sparkling water
- ½ tsp soda
- 2/3 cup flour
- 1 egg
- pinch of salt
- 1 tsp olive oil
- ricotta cheese
- cherries in syrup
Combine all the ingredients in a bowl and mix until everything connects well. It’s a good idea to put it on a side covered with a towel for 30 minutes, but if you don’t have time, start to fry it on a bit of an oil. In a separate bowl mix ricotta cheese with cherries (remember to remove seeds). Spread a big spoon of a cheese mix on each crepe and fold it in a triangle. Pour some syrup over it and enjoy 🙂

I’m so glad that life changes because I love your breakfasts! These crepes are no exception, in fact, they are now at the top of my list to try. Interesting use of sparkling soda instead of baking powder and just gotta love the coffee. Of course the cherries and ricotta speak for themselves!
