Preparing corn cakes is super easy, what may be a bit more complicated is poached egg. But you can use a simple trick my friend shared with me.
It’s Sunday so time for a third recipe we made together with friends from Freunde von Freunden. This time we’ve prepared corn and zucchini cakes with goat cheese and poached egg – doesn’t it sound delicious?
Preparing corn cakes is super easy, what may be a bit more complicated is poached egg. But you can use a simple trick my friend shared with me. Take a kitchen foil and grease it with butter. Place it on a top of a cup and push a bit inside so there will be a space to place an egg. Place an egg without a shell in it and knot the foil. Place it in a boiling water for 3 minutes. And that’s it! No vinegar, no salt, no water stirring. Then just cut off the knot and delicately place your poached egg on a plate.
You will need for cakes (about 12):
- 2 ears of corn
- ½ of a small zucchini
- 1 cup flour
- ½ cup water
- 1 egg
- 2 tbsp cornmeal
- salt and pepper
- oil for frying
To serve with:
- goat cheese
- poached egg
Cut off corn kennels, dice zucchini and heat 1 tablespoon of oil on a frying pan. Fry corn and zucchini for few minutes so it gets softer. Put on a side and let it cool.
In a bowl mix flour, water, egg, cornmeal, salt and pepper. Combine corn mix with a flour mix.
Fry tablespoon of a dough for each cake. You will get abut 12.
Serve 4 cakes with goat cheese and a poached egg.

Ok, so last Saturday I tied to make poached eggs and it was a total mess. It seam for me it’s hit or miss, sometimes they turn out good and sometimes they totally fail. I used the vinegar-water-stirring method. Coming weekend I’m definitely going to try this new one. Thanks for sharing this tip! And the cakes, ohhhh they look delish as usual!

This truly looks and sounds delicious, Marta! Will make it should I stumble upon some fresh corn. I still have to try your method to poach eggs; it sounds really easy and foolproof. Yesterday, I watched a video http://www.youtube.com/watc… from Serious Eats where they showed the fine mesh sieve method. It’s also the method Heidi Swanson uses (I remember reading about it in one of her books). Eager to try both methods and seeing what works best for me.Have the loveliest Sunday, dear!
