Motherhood stories.
Since a week it’s just me and Mia as Mr Greber is having fun in America. Ok it’s a business trip, but still California is fun! On the beginning of this post I must write that I have an enormous respect for women who rise there children just by themselves. It’s been only a week and my Mia is a small angel with randomly growing horns, but my multitasking skills grew like crazy. I am aware 24/7 and I’m always listening if she’s crying. Even when listening to a music… I’ve learned how to make a makeup with one hand and entertain my kid by shaking a toy over her head with another one. Eating in cafes is sometimes fun as well – I shake a stroller and eat with another hand. Taking a shower is fast, internet shopping has more sense than ever and walks – this is my relax time. But cooking is fun. Whatever I do I explain it to Mia, dance and sing recipes. Show her some cool moves so she can process it already. You know being awesome takes practice. And I think she likes our time in a kitchen. She let’s me experiment, not for too long obviously but I can. And life is good 🙂 And I love her.
Today recipe is easy and extremely awesome! It is all Martha Stewart’s idea and I just changed it a bit. I hope you’re curious about a soy flour, of course if you don’t know it yet. One is for sure, you want to try it as it’s healthy, tasty and easy to make. Oh and a sage leaf looks so nice on it. The recipe is for one hungry person (it was me this morning) or two not that hungry.
You will need (for 1-2 people):
- ½ cup soy milk
- 2 tsp lemon juice
- zest from ½ lemon
- ½ cup soy flour
- 2 tbsp yellow cornmeal
- pinch of salt
- 1 tsp baking powder
- 1 egg
- 1 tbsp olive oil
- 2/3 cup blueberries
- 2 tbsp corn kernels
In a cup mix soy milk and lemon juice and leave on a side for few minutes. In a bowl mix lemon zest, flour, cornmeal, salt and baking powder. Then add soy milk, egg and olive oil. Mix everything so ingredients combine. Mix in blueberries and corn. Heat a bit of oil on a frying pan over a medium heat. Place sage leaves and each of them cover with a tablespoon of dough. Fry on both sides till golden.
You can eat it just like this or with a rice syrup or fruits or cream cheese. Your choice 🙂

Agree with you 100% on all those multitasking experiences. 🙂 Who knew we could be this efficient, right?!! 😀 And ohhhh where in Cali is Mr. Greber? There are so many amazing eateries in the LA area so if that’s his location, he’ll thoroughly enjoy his stay hehe. And this sounds like such a scrumptious little pancake! Anything corn is awesome, and lately I’m just in love with sage….browned butter fried sage, to be exact.

Sometimes you don’t have to do stuff with your littles, you can keep them entertained by letting them watch you do stuff. My cat is that way. If I am just on the computer or watching tv she gets so bored, but if I do cleaning or making activities, she is not bored. I compare it to being a passenger in a car. Being in a moving car with scenery going by is so much better than being in a stopped car, waiting.

I’ve never tried soy flour, but these pancakes look like such a breakfast treat!
I remember babysitting and having to cook dinner – the older kids glued to the TV while the younger ones got their hands and feet in every place they weren’t supposed to. But it was still fun to see them happy and eating, doing a little dance with their fork!I love sage when its complemented by something sweet, this pancake looks wonderful!
That looks delicious! Soy flour sounds interesting, I’ve never tried it but did see it at the indian market once. Corn + blueberry is a great flavor too 🙂
