Cranberry and Orange Cornbread

I am about to bake a bread for some time now, since this is a serious matter and worth thinking about (read: I need to grown up to it). As a person in love with a simple solutions, I decided to cheat a little bit and do a cornbread – a banana bread USA. Preparation is trivial, so as the first approach to the subject of bread it was a great choice.

You will need:

  • 1 ½ cups cornmeal
  • 2 tsp baking powder
  • 1 tbsp sugar
  • zest of 1 orange
  • 1 cup dried cranberries
  • 1 egg
  • ¾ cup milk
  • 3 tbsp vegetable oil
  • 1 tbsp butter, melted

Preheat oven to 180 * C. Combine all the ingredients in a bowl. A dough may be a bit lumpy, but it’s not a problem.  Transport the mix into a greased form. Bake for 20 minutes. Bread is best when still warm, and certainly when fresh.

      This is a cornbread, so cornmeal is a must. But you could prepare this bread: http://whatshouldieatforbre… and replace rosemary, raisins and almonds with an orange zest and cranberries 🙂
