Pumpkin may be combined by you with a soup or eventually a cake, but you need to know that it’s also good with crepes. When you add a bit of ricotta to it and ginger sauce, it will be more than delicious. Try it as well.
You will need (for about 10 crepes):
- 2 cups of chopped pumpkin
- 100g of ricotta
For a ginger sauce:
- ½ cup of orange juice
- 1 tsp of honey
- 1 tbsp of freshly granted ginger
For crepes:
- ½ cup of flour
- 2 eggs
- 1 cup of milk
- pinch of salt
- olive oil for frying
Steam the pumpkin for around 25 minutes until soft. Meanwhile prepare a ginger sauce – it’s very simple, just combine all the ingredients and cook them in a small pot for around 15 minutes (sauce should thicken) and pour it through a sieve.
When the pumpkin is ready, crush it with a folk and combine with ricotta and the ginger sauce.
To prepare the dough, put the flour, eggs and salt to the bowl and slowly start to add milk, constantly stirring. Fry the crepes on a small frying pan. when it’s ready, just spread some pumpkin mixture over it and fold it into triangles.
