Policeman are having it for breakfast each morning so why not us. It’s baked so contains a little bit less oil that the fried ones. I have this small bakery in my neighborhood and I used to have donuts each day. Well, I had to quit a bad habit, but can still taste it from time to time 😉
You will need for a dough:
- 2 cups plain flour
- ½ cup caster sugar
- 10g fresh yeast or 5g dried yeast
- 5 egg yolks, beaten
- 2 spoons butter, melted and cooled
- 1 tsp of salt
You will need for a poolish:
- 10g fresh yeast (or 5g dried yeast)
- 1 cup plain flour
- ½ cup warm water
Additionally 1 cup of sugar mixed with 1 tbsp of grounded cinnamon
Start with preparing poolish – dissolve the yeast in warm water and mix in the flour. Leave to rest in a warm place for about 15 minutes (it should start to bubble).
The next step will be to mix the flour, sugar, yeast and 1 tsp salt together. Add the egg yolks, poolish and butter and stir to a soft dough, then knead for 10-15 minutes. Tip the dough into a lightly oiled bowl, cover and leave in a worm place until doubled in size (1-2h). Knead the dough lightly on a floured surface for a few seconds, then cut out the shape. Leave for about 10 minutes before frying.
Heat the oven to 180°C and bake on a tin covered with a baking sheet for about 8-10 minutes. Meantime melt two spoons of butter. When donuts are baked, cool it for 2 minutes and then brush each of them with butter and dip in the cinnamon sugar.
Tastes the best with a glass of milk.
