Memories of the past, of these crazy events organised by my parents, when the whole table was covered with delicious stuff like herrings, different kinds of salads, or eggs in all possible forms. As a youngster I wasn’t admitted to the table and to have fun with guests, but during the preparations I always managed to grab a bit from the table. Egg spread has always been a unique dish for me, perfect for breakfast, and it makes me feel like home.
You will need:
- 4 eggs
- 1 small onion
- 1 small bunch of chives
- 2 tbsp mayonnaise
- salt, pepper
Cook eggs in a boiling water for over 7 minutes and cut them into small cubes. Chop finely onions and chives, add mayonnaise and season with salt and pepper. Mix everything nicely and it’s ready to serve on a fresh piece of bread.
