Eggs Fried with Tomatoes and Goat Cheese

Recipe is easy to prepare and will be a nice replacement for fried eggs.

I’ve prepared few posts in advance, when I was still pregnant with Mia and I could spend days in a kitchen. I didn’t, but I could have. Oh because I’m not pregnant anymore. Mia is with us. She was born on 6th December and we named her Mia Sydney. And I know that one day it will catch me and bite me as she’ll celebrate her birthday on St Nicolas day (big in Poland) and she’s named after a city.

I am not going to describe here how it went except for mentioning that it was fairly easy and fast. I came to my hospital at 8:30 and at 16:30 I was back home with a child. 6 days has passed and I must admit that my life has changed. I still have delicious breakfasts thanks to amazing Tomasz, I still enjoy my days and time, now with Mia. But I love another person and this is crazy amazing. When they gave her to me in a hospital I was like “well, ok, she’s red and looks like an old person”. Then I fall asleep for few hours and Tomasz was the one holding her on his naked chest all this time. We went back home and I was tired and that was pretty much all I’ve felt. But within the next few days I fell in love with this small creature with such an intensity that I kept observing her at night as I was afraid that she’ll stop breathing. I think it’s all because her magical smell – my baby smells like heaven. And now I kiss her 1.000.000 times per day and it’s not enough. Yep, I kissed a girl and I liked it!

Recipe is easy to prepare and will be a nice replacement for fried eggs. Plus it looks so nice on a pan, so colourful. Set up your morning table and enjoy, meantime I’ll go to kiss my daughter.

You will need (for 2-3 people):

  • 2 tbsp oil
  • ½ onion, shredded
  • ½ red capsicum, shredded
  • 1 garlic clove, shredded
  • ½ tsp cinnamon
  • ½ tsp cumin
  • 1 tbsp fresh coriander, shredded
  • pinch of salt and pepper
  • 1 tsp tomato paste
  • 16 cherry tomatoes
  • few slices goat cheese
  • 4 eggs

To serve with:

  • baguette

Heat a frying pan with 2 tbsp of oil and add onion, capsicum, garlic, spices and tomato paste. Heat it for few minute and add cut tomatoes. Cover with a lid and cook for about 15 minutes. After this time add few slices of goat cheese, break in 4 eggs, cover with a lid and fry for about 3-4 minutes, so egg white is cut.

Serve with fresh coriander and baguette.
