It was snowing the whole day yesterday and Amsterdam is just beautiful. Bikes and canals are covered with snow and I’m happy to see it, as the past winter months were nowhere near this view. Today’s recipe may be time consuming unless you have few round cookie cutters. Also with this amount to a dough you will make plenty of crumpets, so if it’s a breakfast for two you may want to cut ingredients in half. I served mine with a sour cream and raspberry jam and we loved it!

You will need:

  • 3 cups flour, sifted
  • 2 tsp dry active yeast
  • 2 & ¾ cups warm water
  • 1 ½ tsp salt
  • 1 tbsp sugar
  • 2 tbsp powdered milk
  • 1 tsp baking soda
  • 2 tbsp warm water

In a bowl combine yeast, sugar and 1 cup warm water then cover it with a foil and leave for around 10 minutes. In a second bowl mix flour, salt and milk. Combine ingredients from two bowl, add 1 & 2/3 cups warm water and mix well. Leave in a warm place for 1 hour. When ready add the baking soda and 2 tbsp of water, cover and leave for 15 minutes.

Warm a frying pan (on a medium heat), grease a round cookie cutter, place it on a pan and fill till the middle high. It will grow a bit. Cook for 4-8 minutes and move on the other side for around 30 seconds. You want to grease the ring from time to time, so the dough won’t stick to it. 

Serve warm with a wiped cream and jam, or cream cheese and some fruits.
