French Toasts with Caramelised Bananas

Today is the last day of 2013! It’s hard to believe, but tomorrow we have a new fresh year to have fun with. 2013 was super good for me and I’ll miss it. But it seems that I’ll experience so much more in 2014th, and I am ready.

I don’t know what are your plans, but I know that whatever you’ll be doing, it will have an impact on your morning. And it will be a special morning – 1st morning of a new year. Soooooo, if you’ll be tired/hangover/fresh/still awake/ready to serve a breakfast for family, french toasts will be a good idea. It goes especially well with a hangover 😉 It is sweet, caramelised bananas are delicious and your stomach will be grateful. So buy bananas, orange and eggs today, and have a fun yummy 1st January 2014 morning tomorrow. Happy New Year!

I adopted this recipe from Williams-Sonoma and they have a nice collection of yummies there.

You will need for toasts (for people):

  • 3 eggs
  • ½ cup milk
  • 1 tsp sugar
  • zest of 1 orange
  • pinch of grated nutmeg
  • 3 slices egg bread
  • olive oil for frying

For caramelised bananas:

  • 2 bananas
  • 2 tbsp butter
  • 1 tbsp sugar
  • juice of ½ orange

Preheat an oven to 175°C (350°F).

Place eggs, milk, sugar, zest and nutmeg in a bowl and mix it. Cut bread slices in half, place each piece in a bowl with an egg mixture and then place in a flat dish like a baking dish and pour the egg mix over it. Leave it for a minute or two, so the break will soak the mixture. Heat a frying pan with a bit of an olive oil and fry toasts on each side until golden (about 2 minutes each side). Then place toasts on a baking tray covered with paper and bake for about 10 minutes.

Meantime cut bananas, melt butter on a frying pan and start to fry bananas, so it’s golden brown on each side. Sprinkle sugar over it and fry for 1 more minute, then add an orange juice and fry for 5 more minutes, so the juice becomes thicker.

Serve toasts covered with caramelised bananas.
