Lets have something delicious, like french toasts with caramelised pears with walnuts, Camembert and arugula.
Do you remember my last post? I wrote about getting wild when my kid was away. This time I went a bit further – I flew to Vienna, magical, beautiful city, full of history, amazing architecture and my beloved schnitzel. I spent two and a half day without Mia. Wow. It was a long time without my sweetest, cutest, funniest girl. Her dad did torture me a bit by sending all these cool videos of them having fun/nap,laughing/giggling/crawling and so on. And I did ignore them all. I took a break. This time without getting wild. I was walking around a city, eating in nice places (thank you for the amazing tips!), I visited a beautiful ceramic store, went to galleries and museums and I sat in front of a few paintings for a bit too long and then… I slept a lot. I needed it so badly. When I came back Mia was sleeping and I couldn’t wait for her to wake up at night and cry, so I can take her to my bed and hug and kiss and whisper how much I love her. Life is good. And apparently a short trip without a kid is priceless.
But there was another advantage as well. I came back full of energy and in the mood to create. There’s so many amazing projects coming and I can’t wait to share it with you guys. Till then, lets have something delicious, like french toasts with caramelised pears with walnuts, Camembert and arugula.
You will need for french toasts:
- 2 bread rolls
- 3 eggs
- 2/3 cup milk
- pinch of salt
- 2 tbsp of coconut oil
For caramelised pears with walnuts:
- 1 tbsp butter
- 2 tbsp palm sugar
- 2 pears
- handful of walnuts or hazelnuts
- rosemary spring
To serve:
- arugula
- Comembert
Cut each bread roll into slices and soak for about 3-4 minutes it in a mixture of eggs, milk and salt. In a frying pan, melt coconut oil and fry on each side over a medium heat until it gets golden.
On a frying pan, heat butter, add sugar and mix. Add pears cut in quarters, rosemary spring and hazelnuts or walnuts. Saute for few minutes.
Serve toasts with arugula, Camambert and caramelised pears.

Do you use walnuts and hazelnuts? And when do you put the rosemary in? It’s not on the ingredients list.

Hi Shelby. I always make recipe few times before I post it. This one I made first with hazelnuts and then with walnuts and I mixed it a bit. This is not an explanation of course, thank you for noticing and letting me know. It’s all fixed now. Have a lovely weekend, Marta
