Fried Apples on Toast

Our time in Portugal.

I am sorry for not posting here like I used to. The honest truth is that I am tired. I honestly am. And I have no idea why. Mia sleeps well at night, she’s cool during a day, but I am tired. Still, being tired in Portugal with sun and higher temperature is much cooler than in cold Berlin. Before I came here I got few messages advising me not to take a stroller. I did and I am glad. It’s not easy to use one over here for sure as Lisbon is quite hilly, but I push and soon I’ll look like a model. On the other hand it gives me some extra time for myself, as Mia has a place to sleep. Believe it or not, I had a chance to drink a coffee facing the sun and even to listen to some music while sitting on stairs in a city.

I remember hearing that baby will change my priorities. I didn’t get it at the time. It’s not only remembering constantly when’s her eating time or to take a changing set or to suggest her a sleeping break. It’s all about her. She’s my number one. And men, she’s learned how to laugh like crazy and I can’t get over it. I made like 100 videos on my phone and I want more. One day she’ll tell me “Mom, it’s creepy that you video me all the time” and I’ll tell her “My lady, you’ll be able to stop me when you’re 18 as till then I want to have each minute of your life on tape”. I’m a crazy mom and I love it!

As I am staying in a place full of cookbooks (I am jealous of this amazing collection) I go through them. Yesterday I felt like a toast with apples that I saw in Ripe book by Nigel Slater . It’s an easy and fast recipe and I’m sure that kids and people with a sweet tooth will love it. Mornings are still important for me, even though that the first thing I want to do is to drink a strong cup of coffee.

You will need:

  • 3 apples
  • juice and zest from ½ lemon
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • pinch of cinnamon
  • handful of raisins
  • handful of almond flakes
  • few slices of bread, preferably sweet one like a brioche with raisins
  • coconut milk
  • butter for frying

Cut apples in quarters and remove seeds. Don’t peal them. Squeeze juice from ½ lemon and pour it over apples, add lemon zest. On a frying pan melt butter and add sugar. Let it fry a bit so it combines, remember to stir. Add apples and let it fry for about 5 minutes, add raisins and almond flakes and mix for a minute or two. Serve with a toasted bread or brush each side of a slice with a coconut milk and fry on a butter.

    Reading this recipe made me smile. I always turned to apples fried in butter and a little brown sugar and cinnamon when I wanted something sweet, but never had the time to make cake. The other thing I’d also do is peel orange segments, sprinkle them with sugar, blow torch them and then sprinkle a little cinnamon. Absolutely lovely! Also, love the new breakfast talks you’ve started!

    Oh, take as many videos of Mia as you can! I wish my mom had filmed me more often (of course, in her defense, there weren’t iPhones in the late ’90s and early 2000s)… I would give anything to have videos of me giggling as a baby.
    And it’s so amazing that you’re able to post, even with the responsibility of your sweet little one.

    I can only imagine tiring taking care of a little one must be. And, as a teenager, I can say that one day she’ll be beyond thankful for all the videos and photos you took of her.I’m glad you’re able to find the time to cook a nice meal for yourself, as well. Anything from Nigel Slater is bound to be delicious, and you make them look stunning!

    Oh goodness, I can only imagine how tired you must be! The fact that you’re able to post at all still floors me every time. Hope you’re getting a bit of time to rest here and there, with some good breakfast — these apples and this toast look incredible. And as always, love your words about Mia 🙂 they always make me smile! Take a million videos!
