Not many people know that I used to live in Las Vegas for a while. That where my crazy youth days (still, I was over 21 years old) full of casinos, parties and hangovers. But it was also a time, when I’ve discovered a mexican cuisine. We’ve found an amazing small food stand on the borders of the city, always full with people, and they served the best food in Las Vegas. It was always an amazing beginning of a night. Time passed (I’m still crazy young!), I live in Europe, but I still love mexican food and tortillas. As the weekend came, I suggest you to try out today’s recipe. It is very easy to prepare and the taste is unforgetable. Plus it made me so happy today 😉
You will need (for 2):
- ½ small red onion
- 2 garlic cloves
- 1 can black beans
- 1 tbsp chili sauce
- ½ tsp cumin
- pinch of cayenne
- salt and pepper
- 2 tortillas
- ½ cup grated cheese
- handful of coriander
- olive oil
- 2 eggs
Chop the onion and garlic, then sate it on a pan with a little bit of the olive oil. Add chili sauce, cumin, hot pepper, salt and pepper. Stir in the drained beans, then leave on low heat so the beans will get warm.
On the second pan, also on a bit of olive oil, fry tortilla on both sides (put it on a kitchen paper later on to remove excess oil) and fry eggs.
Place the tortillas on a plate, cover it with the bean mixture, sprinkle with cheese, place the egg on a top and sprinkle with coriander.

I LOVE Mexican food – it’s such a bummer it isn’t so common in Europe and it’s hard to find really good stuff in restaurants. This is my kind of meal – I love all the flavours… so satisfying and clean-tasting I find, and best of all, it’s as cheap as chips to make too! Love it, thanks for sharing!

I’m lucky to live in California where I get to enjoy really good Mexican food too. However one thing I’ve never done is to eat Mexican food for breakfast! Now you showed me how to prepare, I’d love to give this a try. We eat fried eggs on weekends once in a while anyway. Thank you for sharing your recipe Marta!
