Fried Pear with Asparagus, Walnuts and Blue Cheese

I promise that this recipe will end the “not really a breakfast” posts. But to be honest I had this salad for breakfast and it was amazing. As I’ve mentioned many times, I am a sweet tooth and a combination of a pear and a blue cheese made me very happy. You know how it is, when you have a great breakfast and it makes you feel good, most probably you’ll stay like this for the rest of the day. 

The process of preparation is easy and fast, don’t think that just because you need to fry something it makes the recipe difficult. Beside the taste, this salad will make you feel as if you had spring in your mouth.

You will need:

  • 1 pear
  • asparaguses, small bunch
  • walnuts, small bunch
  • fresh rosemary, 1 tbsp
  • olive oil
  • blue cheese
  • baby salad

For dressing:

  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • pinch of cayenne pepper
  • 1 tbsp honey
  • pepper for taste

Mix all the ingredients for the dressing in a small cup and put on a side.

Cut the pear along in 4 pieces and clean it from seeds. On a medium fire heat a frying pan with 2 tbsp of an olive oil. Add rosemary and pear and fry for 2-3 minutes. Add asparaguses (cut off endings first) and fry for another 2-3 minutes. In the end add walnuts and fry for another 2 minutes.

Place baby salad on a plate and arrange everything from a pan on top of it (remember that we always eat with eyes first), spread the blue cheese over it and add a dressing. Tastes the best when still hot.
