it’s been 1 month with Mia
Time passes by and Mia is over one month old. I remember someone told me when I was pregnant that this first month will go so fast that I won’t even notice. I didn’t get it then, but I do now. I want this month back! It was a period of first times on almost every day basis. First smile, first poo explosion, first drama, first coffee in cafe with my girl, first restaurant adventure (yes we did it!) and first walk with a stroller. I don’t know if you remember me complaining about buying a stroller. I must say that it was like buying a car, so many options and even more opinions.
There is this thing about going for a walk with a newborn. Everything is ok when we’re outside on cold, but try to go inside to sit and enjoy your coffee and they know. Mia opens her eyes and it’s like saying ‘no, no, no, you’re not doing it without me on your hands’! Or maybe I over read her signs because I want to show to a whole place how cute my baby is. Yep she’s the cutest girl in the whole world. And I’m sure that each of you moms will agree that your child is as well 😉
I’d like to thank everyone for all the warm and beautiful words about my small family. I don’t have a lot of time lately to answer all mails and comments but I truly appreciate it. Big love to you!
I’m still in a subject of easy breakfasts and this recipe for fried ricotta with mushrooms and radish is perfect. It’s also filling, so have it and go for a nice walk.
You will need for fried ricotta:
- 250g ricotta
- 1 tbsp parmesan, grated
- 1 egg
- 1 tbsp flour
- salt and pepper
For serving:
- mushrooms, fried
- radish
- greens like salat
Mix all the ingredients in a bowl and leave i na fridge for some time (few hours or overnight). Start to fry it on a pan with some oil. For each ricotta cake use one tablespoon of dough, you want to make it small as it won’t be easy to flip it over. The dough is quite delicate. But it is worth it. Fry over a medium heat on both sides, so it’s golden brown.
I served mine with grated parmesan on top, fried mushrooms, radish and greens.

You both are so lovely! Much much much happiness to your family, Marta! Dried ricotta looks like my favourite Ukrainian meal – syrniki (i think it’s kind of). Sweet syrniki I like more, but I never try to cook the savoury ones. It’s very interesting idea!

How have I NEVER thought of fried ricotta?!!! Wonderful wonderful recipe! And oh mannn that is such a beautiful scene~walkin’ through a woodsy area having precious family time. 🙂 Our favorite activity together is literally just strolling! It’s really strange how babies protest at everything that is “right” in our own eyes, lol.
