Fruit Pizza on a Cinnamon Dough

Cinnamon dough is delicious and goes pretty well with all the fruits and a cranberry sauce.

My dear friends I think that I’ve had my first panic attack. I am a relaxed person, trying to enjoy my life and each small element of my day (that’s why I’m crazy about breakfast). It’s not always easy, but I believe it is possible. But I have only few weeks left to become a mother for the very first time and yesterday I started a day from thinking too much. Thoughts were swirling in my head and I couldn’t stop them from going in a wrong direction. And then it has happened. I am afraid that you’ve read this phrase far too often lately, but I’ll write it again – poor Tomasz. He’s my personal hero lately, as he knows how to handle me in every new situation.

i am also super grateful for this blog, where I can create something, share it with you and jump into my small personal word for few hours. And obviously for you! Thank you so much for all the lovely comments on my Instagram . I felt much better after reading them.

And now let’s go back to our pizza. Cinnamon dough is delicious and goes pretty well with all the fruits and a cranberry sauce. It is a comfort breakfast food, as it made me feel much better. So if you’re having a bad day (delicate way of saying it) make pizza!

You will need for a dough:

  • 125g flour
  • 1 tsp instant yeast
  • pinch of salt
  • pinch of vanilla sugar
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp olive oil
  • 75ml warm water

For a topping:

  • ½ apple
  • ½ pear
  • 1 orange
  • 1 tbsp lemon juice
  • zest from ½ lemon
  • pinch of dried rosemary

In a bowl mix ingredients for a dough and knead for about 10 minutes. Brush bowl with an oil, place there your dough, cover and leave in a warm place for about an hour.

After this time spread some flour on a flat surface and roll the dough into one bigger pizza or two smaller.

Heat a frying pan over a medium heat and place there cut in small pieces apple, pear and orange, lemon juice, lemon zest and rosemary. Heat it for few minutes and then place on your pizza.

Bake in 220*C for about 12 minutes.

Serve your pizza with cranberry jam, nuts and a bit of a natural yogurt. You can make your own cranberry jam by cooking cranberries with sugar and a bit of water.

    I have struggled with panic attacks occasionally myself and have found that they tend to come during times of big transition. You’re about to enter a huge life change, so a panic attack seems totally normal. Hoping for peace and calm and lots of rest (and fruit pizza) for you in the next few weeks!

Sometime you should be the model instead of Tomasz as a memory before you give birth…hehe, just kidding–only if you want. 😉 And no worries, we all have weird scary and confused emotions leading up to the due date! Just take it as it comes and if you freak out, it’s allllll good because once you have the little darling in your arms you’re in a completely different world full of bliss and awe 😀 The best feeling ever! But then it’s also important to keep in mind that we’re all different, so it’s wise not to compare our experiences with others, right?
