Goat Cheese Almonds and Roasted Grapes Bruschette

My dear friends, do you miss summer (at least ones from Europe)? I do. I went for a walk yesterday, a long cold walk. It was beautiful of course, but when I’ve came back home, I had to heat some wine with cloves and spices to warm myself up. I’ve automatically started to think about all this times when I wanted to wander around the city during the hot days but kept postponing it. Yesterday I’ve decided not to do it anymore and whenever I’ll be in need for a walk, I do it. At least this is what I’m thinking today 😉

And because I miss summer a bit, I made a kind of a summer breakfast – a bruschette with a goat cheese, almonds, grapes and honey. It truly reminded me of a beautiful warm sunny days. I hope it will have a similar impact on you as well. 

You will need:

  • 15 grapes
  • 1 small handful of fresh thyme leaves
  • olive oil
  • salt & pepper
  • almonds, chopped
  • 2 thick slices of bread
  • 1 small garlic clove
  • goat cheese
  • honey

Heat an oven to 175°C. 

The sandwich is served hot, so we’ll heat everything. Let’s start with grapes. Place it on a paper sheet and drizzle with the olive oil, season with salt and pepper, put most of the thyme on top and shake a bit, so the grapes are covered with all ingredients. Bake for about 10-15 minutes (until it starts to blister and color). 

On another paper sheet place almonds, cover it with a bit of an olive oil and bake for about 5 minutes.

While baking grapes and almonds, place the bread inside the oven for about 2-3 minutes, then rub it with a garlic cut in half. 

You have each element of your sandwich ready, so it’s time to make it. Drizzle the bread with the olive oil, spread the goat cheese on it, top with grapes (I cut it in half) and almonds and in the end drizzle with honey and garnish with the rest of the thyme leaves. Tastes best when still hot.

    Garlic warm bruschetta is my favourite way to eat bread. I love the goat cheese/grapes…you are right this breakfast must be eaten warm!! My kids expect to go for long walks: hot, cold, sunny, rainy…I feel like you, I push myself to go out and then I enjoy it!
