A delicate taste, light texture, ideal for breakfast. Preparation may seem complicated for a morning, but it is not and it’s worth an effort. It’s simply delicious!

You will need (for 2 servings):

  • 30g cream cheese (like Philadelphia)
  • 2 eggs (at room temperature, separate the whites from the yolks)
  • 60g fresh goat cheese
  • grated zest of 1 / 2 lemon
  • 2 tbsp sugar
  • pinch of salt

Prepare two small cups for baking, grease them with butter, then pour the sugar and spread it evenly on bottom and sides. Set the ramekins on a side.

Preheat oven to 200ºC.

In a bowl mix cream cheese, goat cheese, egg yolks and lemon zest until you make it smooth.

In another bowl whisk the egg whites with a pinch of salt, when well beaten slowly start to add sugar.

Add 1 / 3 of the egg whites mixture to the cheese mixture and stir it. Then slowly add the rest, stir gently to combine everything nicely (however if there’s a bit of the white foam, it is not a problem).

Divide the mix between the two previously prepared cups, smooth the surface with a spoon, then sprinkle each with 1 / 2 teaspoon sugar.

Bake for 10-15 minutes or until top is browned.
