One thing Is for sure – green focaccia will rock your morning!

Welcome to the day forth of the rainbow week. I have to say that I am already very proud of myself and at the same time very surprised that I managed to make four breakfasts recipes in one week. Who would think 😀 Three more to go and hopefully it will happen. Today’s colour is green like green apples, pistachios and mint. And this is literally what I put on my focaccia. Apples went a bit yellowish while baking, but I believe you get the whole idea. One thing Is for sure – green focaccia will rock your morning! It grew so beautifully, that I made another one in the evening for friends. Baking is kind of a meditation for me. Just like making crepes. In general, I think that cooking gives me a sort of happiness. This is the crazy thing about my rainbow week. I thought that it will be super difficult, but in the end it is fun and I enjoy the process. Stay tuned for the colour blue.

Recipe

YOU WILL NEED FOR THE DOUGH:

  • ½ tsp sugar
  • 2 tsp active dry yeast
  • 1 & ½ cup warm milk
  • 3 cups flour
  • 1 tbsp olive oil
  • 1 tsp sea salt

ADDITIONALLY:

  • 2-3 Apples
  • 2 tbsp mint leaves
  • 2 tbsp olive oil
  • sugar to sprinkle
Mix yeast, sugar and milk in a bowl and leave in a warm place for about 5 minutes. It should start to babble.

In a big bowl, place the flour, salt and add the oil. Start to add the milk mixture and mix it with a spoon or knife, so it combines. Start to knead it with your hands, till it stops to be sticky and the dough becomes flexible. You may need to add some more flour (for about 5 minutes). Stretch the dough and place it in a form (I used 20cm x 30cm), cover with a table cloth and let it rest in a warm place for about 1h or until it doubles it’s size.

Make holes in the dough by pressing your finger. Mix oil with well cut mint and spread it across your dough. Decorate with green apples, sprinkle with sugar.

Bake in 200*C for about 20 minutes.
