I could not run away from it. With a first snow a first cold came. I like to stay at home in my pyjama, reading and drinking hot tea with lemon and honey. But I don’t like being in a half dream state. It’s difficult to think and organise myself. It’s just a short post as it’s hard to write as well. This omelette is easy to prepare and original in taste. Perfect as a morning treat for a sick person.
You will need (for 1):
- 3 eggs
- salt and pepper
- 1 tbsp parmesan
- 1/3 cup green peas
- 1 tbsp truffle oil (or an olive oil)
- 1 tsp lemon zest
- goat cheese
- 2 tbsp butter
- 1 tbsp mint, shredded
Start with a peas. Place it in a small pot with a salted boiling water and boil for about 1-2 minutes. Drain it and place in a bowl with an oil, salt, pepper and a lemon zest.
In another bowl whisk eggs with salt, pepper and parmesan. On a medium size frying pan heat a butter and pour the egg mix. Fry over a medium heat until the egg is not runny. You can make few small holes in the omelette to speed the process. Place an omelette on a plate, spread peas, goat cheese and mint on it and roll it or fold it in half. This recipe was adopted from Saveur.
Enjoy, Marta
Your photography is so utterly beautiful.
My fav way of eating omlet but I like my peas cold. My husband thinks this is strange but I grew up in Poland eating this for breakfast. Makes me smile.

I realized how much I love breakfast every time I come to your site. Like this omelette. So simple, yet I immediately want to go downstairs and make it (will do in a few hours for lunch!). Love reading/seeing your lifestyle through your writing/photography. My life is so chaotic with kids and their activities, so I love coming here for some kind of relaxation (I know it sounds funny, but truth. ;)).
