Green Polenta Pizza

How “penalty post” may be a good thing.

I’m back in action. Last year wasn’t too active on this blog, all because my bag of sugar became heavier, started to walk, stopped to sleep and wanted to hang out with her mom all the time. She thinks I’m cool, you know. I’ll remind her about it when she’s 15. Then two amazing things have happened. I made a pact with one girl. We have to exercise at least 4 times a week and if one of us won’t, we need to make an extra post on our blogs. So you know why I am so active in this week, hehe. But… we have this pact for three months now, I look awesomely fit and this is my first “penalty” post. The second thing – my “not so little anymore” daughter started kindergarten. And she loves it! She didn’t cry when we started to leave her there, she’s still chilled and she has a big smile when we pick her up (ok, not always, sometimes it’s just before her nap, so it’s kind of a world’s tragedy). What does it mean to me? I have my life back. Between 9am and 14pm I can work, cook, shoot, drink coffee and read magazines. I can do whatever I want, even just sleep or watch a movie. The first week of it was so extremely strange, I had so much time on my hands that I didn’t know what to do with it. I was also very tired, so maybe I just needed to rest. The second has started and… Mia got sick. So now I’m back to my old mama—full-time-life. But when she’s healthy there will be more cooking, more experimenting, more of everything. I’m a happy girl.

Pizza and pasta is something I could eat all the time. I love breakfast pizza, it’s so easy to make and also such a tempting guilty pleasure. I was going through Pinterest and I saw this amazing polenta pizza and I felt like this may be my new favourite breakfast of a week. Let’s be honest here, this is a totally fake pizza, but it does taste good. So why not try it? If you like this idea, try also a sweet version.

Recipe

You will need:

  • 1 cup polenta
  • 1 cup millet milk
  • ½ cup flour
  • pinch of salt
  • 1 tsp baking powder
  • 1/3 cup grated parmesan
  • pinch of chili flakes
  • 1 tbsp coconut oil
  • 1 zucchini
  • about 100g feta
  • pea (frozen)
  • fresh mint
  • pepper to garnish
Heat your oven to 190*C. Place coconut oil in your cast iron pan and place in an oven for a minute, so it melts.

In a bowl, place polenta, millet milk, flour, salt, baking powder, Parmesan, chili flakes and mix well. Pour into a pan and bake for about 5 minutes.

Cut zucchini in a very slim strips (I used a peeler), cut feta in small pieces. Take the pan out of the oven, place zucchini strips on top, pour feta and add pea. Bake for another 15 minutes.

Serve with fresh mint leaves and pepper.

    Mia is in Kindergarten already (maybe equivalent to Preschool here?)! 9 to 4 is nice long time to do things. Here in the US, usually it’s half day (without lunch) for young age and even now it’s 2:30. Such a short period of time. I’m so glad you have some time for your self. I can imagine you’re very excited, motivated, and full of ideas to share here! Love the polenta pizza! Looks very delicious, and of course so pretty!

    I can’t wait to send my boy to pre school! He is so clinged on to me all the time that I doubt our situation would be tear-free. Anyways, your post gave me hope, hope to watch a movie without someone climbing on me or hope to shoot without rushing or cook in a rush, you know what I mean 😀

    millet milk sounds very interesting…i have only cooked polenta tradtionally..using it as pizza looks good!!! i cant believe Mia is starting school already!

    This looks amazing – I have to confess I’ve never cooked Polenta. I’m always unsure of what to do with it, you know there are just some foods you’re a bit scared of, because if you cook it wrong, you could ruin that food for you, forever.OK that’s a bit dramatic, but it’s the same reason I never make risotto at home – my boyfriend really hates it, so I think of it as my treat if we go to a good restaurant.I know what you mean about having so much time to blog, but mine is in reverse, I had lots of time back in November and I was baking like a demon 🙂 Now we have a puppy, I feel like I’m stirring ganache with one hand throwing a puppy toy with the other and wishing I had another pair of arms to do the dishes/hoovering/dusting etc!

    Not sure what millet milk is……can I use regular cow’s milk in this recipe? Looks so good!

      Yes of course 🙂 you can use regular cow milk or almond milk or any other milk. In Berlin millet milk got popular in organic store, so I experiment with it a bit. Hopw you’ll like it 🙂 you can also add 2/3 cup milk and an egg if you prefer.
