If you follow my Facebook page you most probably know, that I’ve been to New Zealand for the past few days. It was a great trip, but not to start with. There were some losses, serious ones. For two days I was pretty much freaking our most of the time. But then I went to Raglan and it was soooo good. I climbed volcano in totally wrong shoes, got free fish burger, met amazing people and seen amazing colours on a sky. It was a peaceful time. I also had an awesome food during my stay. I’ve discovered a feijoa fruits that tastes like a wild strawberry but looks totally different. I had an amazing fish and chips almost straight from the sea and had a yummy green pea, feta and poached egg sandwich that I’m recreating today. It is simple to prepare and really interesting in flavour.
I served my on a soda bread with dried tomatoes that I made the night before and it was a good choice as well. If you’d like a recipe, I’ll post it, but it’s simply another version of this rosemary bread.
You will need:
- 1 egg, poached
- slice of bread
- ½ cup green peas, frozen
- feta cheese
- pine nuts
- mix of greens
- olive oil
- salt and pepper
Place peas in a boiling salted water for 1-2 minutes, drain and squeeze it with a bit of an olive oil, salt and pepper. Poach an egg and fry pine nuts on few drops of an olive oil. On a slice of bread place peas, feta, nuts, and the egg, cover with mix of greens.

Dixyya it’s easy. I wrote about it over here: http://whatshouldieatforbre…but to make it faster – it helps to add 1 tablespoon of vinegar and 1/2 tablespoon of salt to the boiling water and then, just before adding the egg, you need to stir the water.

Stunning breakfast, my favourite kind! It’s been lovely reading through the posts from your trip to New Zealand and Australia. I tasted a feijoa when I was in New Zeland too and I didn’t like it at all! Interesting that you find it tastes like a wild strawberry… now I want to try a wild strawberry and compare it! x
