There are mornings so hectic that you don’t have time to make a breakfast or to eat it. There are mornings when you feel like something fast, so you grab a banana or an apple. If you know that next morning will be just like it, this is what you can do. Make a smoothie that is full of vitamins the night before, refrigerate it and drink in a morning. It’s a nice replacement for an apple of yogurt. And despise arugula, it taste great. I’ve found this recipe on The New York Times website and I believe they know their stuff. Make it, try it, love it.
You will need:
- ½ cup orange juice, freshly squeezed
- big handful arugula
- 1 tbsp walnuts, cut
- ½ pear, peeled
- ¼ tsp ginger
- 4 tbsp soy yogurt
Just place everything in blender and blend it baby!

I never tried arugula/rocket in this form before… I saw it baked into something the other day too and it made me curious as to how much the flavour changes as a result of the rocket addition – Will give it a try some time – I like the addition of pear, that sounds nice!
I’ve heard all this craze about green smoothies, but this one seems the most drinkable! I think I’ve been put off trying as the first time I heard about it was from a lady who struggles to get it down every morning!

I’ve added flat leaf Italian parsley to my blueberry smoothies, but never thought of arugula with pear. Lovely shade of green and looks delicious. Superfood power!
