Greens, Halloumi and Egg

Tomasz is the healthy part of our family, well, maybe except for his little Nutella addition. I am a sweet tooth and a big fan of pancakes, honey, fritters … so many good options to have. But since it’s hot in Berlin I feel like eating greens all the time. And it’s a good thing. I grab my basket and walk between stands hidden under big umbrellas and I collect my veggies. Farmers markets have this special atmosphere, people are in hurry but they enjoy their time as well.

I hope that you’ll like today’s breakfast, we did.

You will need:

  • cous cous
  • few mint leaves, shredded
  • avocado
  • mushrooms, fried
  • asparagus, roasted
  • egg, boiled half hard
  • halloumi, fried
  • spinach, fried
  • pumpkin seeds, fried

Boil water and pour it over couscous, add salt and a bit of pepper, wait few minutes so it will absorb the water and mix with shredded mint. Place it in a bowl and a quarter of avocado. Place a room temperature egg in a boilng water for bout 6 minutes and you’ll get a half hard boiled one. Fry mushrooms, asparagus, spinach, pumpkin seeds and halloumi, then place everything in a bowl. This easy.
