Call me a cheese lover but I’ll eat fried haloumi with salsa and on the end I’ll ask for more.
You will need:
- Haloumi cheese, sliced
- 1 tbsp honey
For salsa:
- ½ pomegranate
- 4 tbsp olive oil
- 2 tbsp chopped parsley
- 1 tbsp lemon juice
- 1 small red chilli, deseeded and finely chopped
- 1 small garlic clove, crushed
- salt and pepper
Start with a pomegranate salsa. Scoop the pomegranate seeds into a bowl (avoid the white membrane), stir in the remaining ingredients and season with salt and pepper.
Heat a nonstick frying pan for 2-3 minutes, put on some haloumi slices and fry over a high heat for about 60 seconds on each side.
Meanwhile warm the honey in a small saucepan.
Serve haloumi with salsa and honey over it.
