Healthy Quinoa Bars

When you miss one city for far too long, you feel like a tourist when you’re back. I’ve been discovering Berlin quite a lot lately. One reason is that we had a friend over but also I want to make a small Berlin guide with my most favourite spots. I did not cook much, instead I kept eating out (more Eat Berlin posts on a way). But yesterday at night I got this amazing recipe from a friend and it turned out I had most of ingredients home. I modified it just a little bit and what came out is simply awesome(the original recipe at He needs food). Healthy, easy to make, vegan and yummy. You can give it to your kids, pack if for work, or eat it piece after piece for a whole day like me and Tomasz did.

I do not own a food professor, so I shredded all ingredients in a blender. A bit time consuming, but possible. If you have a food processor at home it will go much faster.

You will need:

  • 1 cup quinoa flakes
  • 1 cup almonds
  • ¼ cup coconut flakes
  • 1 cup dried apple
  • ½ cup dried cranberries
  • 1 cup dried apricots
  • ½ cup orange juice
  • ¼ cup mixed sunflower and pumpkin seeds

Spread quinoa flakes, almonds and coconut flakes on a baking tray covered with a paper and bake in 200*C for about 6 minutes (watch it, so it won’t burn). When it cools down you have to place it in a food processor with the rest of the ingredients except the juice. When everything is shredded add the juice and let the engine run a bit longer. If you don’t haver a food processor blend each ingredient in a blender and then mix in a juice using a spoon.

Take a medium baking dish (about 20cm2), cover it with a baking paper and place quinoa mix on it. Flatten it equally. You can spread over some cranberries or seeds so it will look nicer. Cover it with a paper or a foil and refrigerate overnight.

It tastes amazing with a natural yogurt.

    Hi! I made this last night and love the flavors! I would love to make it a lot crunchier instead of chewy. Have you ever baked the mixture after you combine it in the food processor?

    These look gorgeous Marta. I love any type of chewy fruit and nut bar so these are right up my alley for breakfast or snacks! Love the idea of eating them with natural yoghurt. Would be so good for a quick pre-work breakfast x

      Katerinka it’s about 250ml cup. To be honest I am using a cup for my coffee. In this kind of recipes, when you count everything by a cup each one will work 🙂
