Herbal Waffles with Greens, Champignons and Fried Egg

Life is a funny thing and it surprises me on an everyday basis. I’m not talking about motherhood here, as this would be too obvious (Like for instance Mia’s discovered that she can scream on a very high tone and she enjoys it all day long). I’m talking about how everything goes from A to B.

In 2013 I spent two crazy months in San Francisco. It’s such an inspiring city. I have a thing for small, unique stores and cafes, so one day I went to The Perish Trust . This place was amazing, each piece sold there has unique qualities and obviously I wanted to buy them all. There were few Gestalten books, I went through each of them and took one home. But before I did, I told Tomasz that it would be great to have my pictures in one of them one day.

And today, it’s happened! I am happy to write that few of my pictures are in new The Delicious book by Gestalten. And I’m also super proud that my picture is on the cover! The book looks amazing and it’s all about new food culture, so something close to my heart. I hope you’ll have a chance to check it out one day.

You will need for waffles (about 6):

  • 1 & ½ whole wheat flour
  • 1 cup milk
  • 2 eggs
  • 1/3 cup olive oil
  • 1 tbsp baking powder
  • pinch of salt
  • ½ cup grated cheese
  • 1 tbsp chives, chopped
  • 1 tbsp basil, chopped
  • 1 tsp rosemary, chopped
  • ½ small onion, chopped

For serving:

  • champignons, cut in small pieces
  • fried eggs
  • greens like spinach or baby lettuce
  • salt and pepper

Cut onion in small pieces and fry in a pan with a teaspoon of oil over a medium heat. Let it cool down.

Place all the ingredients for waffles in a bowl and mix. The dough is ready. Now make waffles and I’m sure you know how to use your waffle machine.

Meantime fry champignons over a medium heat and make your fried eggs.

Serve waffles covered with mushrooms, greens and an egg.
