Searching for new recipes is like an adventure. Sometimes it’s difficult and I don’t feel like preparing anything. Fortunately most of times I’m able to find something just perfect.
As spring is coming and everything very slowly starts to grow, I feel like herbs and vegetables. I’m sure you do as well. I especially like tomatoes. So today I made some delicious sandwiches. But first I baked the biscuits.
You will need:
For 8 biscuits:
- 220g butter, grated
- 2 cups flour
- 1 tbsp sugar
- ½ tsp salt
- 1 & ½ tsp baking powder
- 1 & 1/3 cups buttermilk
- 2 tbsp each fresh chopped chives, parsley, and dill
For sandwiches:
- 200g sharp white cheddar cheese, grated
- 4 tbsp cream
- ham, sliced thin
- 1 tomato, sliced
We will start with the biscuits. Preheat oven to 200*C. Place the butter in a freezer for a couple of minutes. In a large bowl, stir together the flour, sugar, salt, and baking powder. The next step will be to grate the butter into the flour and connect all the ingredients well with a fork. Pour the buttermilk and herbs into the well then use a fork to stir the mixture together just until the dough begins to follow the fork around the bowl. Transport the dough on a floured surface and knead three or four times, then press the dough into a 1-1,5 cm thick rectangle and cut eight even, square shaped biscuits with a knife. Place them on a baking sheet and bake for 16-18 minutes.
When your biscuits are warm and ready, you can make few sandwiches. In a small pot heat the cheese and cream until melted. Slice warm biscuits in half, top with ham, melted cheese sauce, and a tomato slice.
