I haven’t been writing for a while, that’s because I had 3 weeks of holiday. I went Poland where I’ve met all my best friends and had so many things to do, that I didn’t have time for breakfast. Ok, to be honest, sometimes I didn’t have energy to do it 😉
I’m back in Amsterdam and it’s high time to upload something on the blog. The other thing is that my mother is over here for the first time and this women knows how to cook! Sooooooooooo……… today I made something amazing. Easy, but tasty and, you may say, original. I’ve never tried french toasts that were not sweet or without fruits before. Have you?
You will need:
- 2 eggs
- ½ cup milk
- 1 tbsp snipped chives
- 1 tbsp chopped parsley
- 30g butter
- 4 thick slices ciabatta
- 3 slices smoked salmon
- ½ cup creme fraiche
- extra parsley and chives to serve
- salt and pepper
In a deep plate combine eggs, milk and herbs, season it with salt and pepper and whisk well.
Heat butter in a frying pan on medium heat, meanwhile dip each side of ciabatta in egg mixture and move it on the pan. Cook ciabatta for 2-3 minutes on each side, until golden. When it’s ready, drain on paper towel.
Serve topped with smoked salmon and creme fraiche. Sprinkle with extra chives and parsley.
