Herbed French Toasts with Roasted Vegetables and Feta

I start to believe that german language is the most difficult language in the world. Most probably someone will write that chinese or thai is harder, but for me german is on the first place. I hope that a day will come when I break a barrier or something and it will go. For now when I try to use it, somehow it mixes with many english words and english grammar. Ups.

I learn 4 days a week at school, then I learn more at home and it doesn’t seen to improve. But, when you need to do something and have to combine it with work, you start to be creative in different fields. When I need to study, I usually think about food too much. And this is how herbed toasts with roasted veggies came to life.

You will need:

  • 1 egg
  • ¼ cup milk
  • 1 tsp snipped chives
  • 1 tsp rosemary
  • 1 tbsp butter
  • 4 thick slices ciabatta
  • 2 tbsp feta
  • 1 tbsp natural yogurt
  • 1 carrot
  • 1 small beetroot
  • ½ apple
  • olive oil
  • salt and pepper

In a deep plate combine eggs, milk and herbs, season it with salt and pepper and whisk well.

Heat butter in a frying pan on medium heat, meanwhile dip each side of ciabatta in egg mixture and move it on the pan. Fry ciabatta for 2-3 minutes on each side, until it’s nicely golden. When it’s ready, drain on paper towel.
Cut vegetables in pieces and bake in 150*C for about 30 minutes.
In a bowl mix feta with yogurt.

Place toasts on a plate, cover with feta mix and vegetables. Season with pepper and salt for taste

    That’s a delicious-looking wholesome breakfast. Learning a language is all about giving in to it and not trying too hard. That’s how it happened with me in Italy. I watched a lot of TV and I just absorbed it passively.

    It’s always hard to learn a new language. It’s the same with french and me. I had learned it in school for several years, then unfortunately forgot everything. Meanwhile now and then I take a course at the “Volkshochschule” to stay with it, but it’s still very hard for me to learn this language.     I find all languages hard to learn. I used to learn Italian then they stopped teaching it. I tried Chinese and French and it just didn’t stick. I’m trying to learn French again but I never have the time. Keep going with your German! .. and your lovely cooking!! x

    Marta, you SO inspire me with your dedication to learn! I wish I knew two languages, and I hope to teach Lucy french as she grows up. This looks just delicious. I love feta cheese and it would certainly be a great way to start the day.

    You know this reminds me of my savoury, Indianised version of French toast that I enjoy.. that has coriander and green chiliies.. and season with salt, turmeric powder and chilli powder.. how many Uni nights I survived on it!!

    Believe or not but French seems to be even harder to learn. German has its own logic. I am sure you will manage to get over it.

    So lovely!. I agree with you I find German and Russian one of hardest languages to get right. I can not even pronounce some of the local foods when I want to buy them in the deli.
