There is one polish food blog I adore – White Plate. I visit it on regular bases for inspirations and yummy recipes (believe me or not, I don’t only make breakfasts). After my last visit I had to make pita breads, as Liska wrote that it’s super easy to prepare at home. It is indeed and I am telling you, it’s just the beginning of a pita breakfast story.
Making pita bread will take you maximum an hour, as a dough needs 30 minutes of rest. You can put whatever you wish on it. I’ve found a nice idea on Buzz Feed and I had most of the ingredients at home so it was my first choice.
Being back in Berlin is amazing. The weather is great and I am biking around, visiting markets and buying flowers. This Sunday I am definitely going to look for some treasures on a flea market. Keep your fingers crossed, maybe I’ll find something special.
You will need for pita:
- 2 cups flour
- 2/3 cup water
- 1 tsp instant yeast
- 2 tbsp olive oil
- 1tsp salt
- 1 tsp sugar
For filling:
- ¾ cup quinoa
- 1 avocado
- juice of ½ lemon
- 1 green onion
- few chives
- few asparaguses
- 1 tbsp olive oil
- salt and pepper
- radish, sliced
Mix all the ingredients for pita bread in a bowl and knead a dough until it’s smooth. Leave it for 30 minutes so it can rest. After this time divide the dough in 8 equal parts, each of them roll into a flat round shape. Heat an iron pan, pour a little bit of oil on it and fry each piece on each side for about 30 seconds.
Cook quinoa and set aside. If you’re not sure how to cook it, don’t worry, it’s easy. First place it in a water for few minutes. Then place in a pot with 2 cups of water and a pinch of salt. Bring it to boil, then set up the heat to low and cook for about 15 minutes, so all the water evaporates.
Bake asparagus with oil, salt and pepper in 200*C (400*F) until soft (about 12 minutes).
In a small bowl mix smashed avocado with a lemon juice, shredded onion and chives.
All ingredients are ready, so place pita on a plate and cover it with quinoa, few asparaguses, avocado mix and slices of radish.
