Homemade Scones with Eggs and Chorrizo

In 2009 I was traveling in Vietnam and I met Mariele, sweet american gal with a sunshine personality. We traveled together for a week from what I remember and we kept in touch for all this years (thank you facebook). We almost met when I moved to San Francisco for 2 months, but one month before my arrival she moved out. I hope that one day we’ll meet for a coffee or a glass of wine. But for now I got a really nice present from Mariele – hand made ceramic plates that you can see below. She makes different kinds of plates, bowls and even a planter. I remember falling in love with her earrings and bags. Who would say that one day I’ll eat freshly baked scones from her plates. You can check it out on her website Young in the mountains. I hope you’ll like it as much as I do.

You will need:

  • 3 cups self raising flour and more for dusting
  • 80g butter, cut in small cubes
  • pinch of salt
  • 1 cup milk
  • 2 tbsp natural yogurt

Preheat an oven to 225*C.

Place flour with salt and butter in a bowl and rub until it resembles fine breadcrumb. Add milk and yogurt and knead until smoth. Transfer the dough to a lightly floured surface and roll out to form a rough shape about 2.5cm thick. Cut out circles with a glass and place on a baking tray covered with a baking paper. Brush tops with a bit of milk to give it a golden color.

Bake for around 20 minutes.

I served mine with rucola, scrambled eggs, a bit of cheese and fried chorizo. Yummy!

You can also freeze dough formed in scones 🙂

    I’d have to first try this lovely little scone with some butter and homemade jam. For me, that’s a must for any hot scone or biscuit right out of the oven. Such a lovely and easy scone to make and I do love your topping of eggs and chorizo, the next best thing to eggs and bacon. 🙂
