Hot Poached Egg Sandwich with Red Pesto and Bacon

What is the best possible breakfast option? I would say breakfast with friends. Especially when you miss them so much every day. It also helps when they like what you’ve prepared (it makes my heart sing).

My time in Warsaw was good, full of good people, places and fun. I could write about everything that have happened over there, but let’s be honest, there were some very embarrassing moments and you don’t want to read about it, hahaha. 

I’ve visited two nice and new for me places in Warsaw where you can eat well, have a cup of coffee but  also sit for a while with your computer and work. I’ll write about this places in the next post. 

Coming back to today’s breakfast – I chose bread rolls that look and taste like bagels, but you can use any kind or rolls or an english muffin. Making a poached egg is not the simplest thing in the world, but it’s not as difficult as we think it is. It helps to add 1 tablespoon of vinegar and ½ tablespoon of salt to the boiling water and then, just before adding the egg, you need to stir the water. 

You will need (for 1):

  • 1 bread roll
  • 1 tbsp red pesto
  • 1 tbsp mayonnaise
  • baby salad
  • capsicum
  • bacon
  • egg
  • salt and pepper

Mix pesto with mayonnaise in a small cup. You can toast the bread roll if you like (I did as I like when it’s crispy). Spread a spoon of the mayo mixture on each side of the bread roll. On one side place baby salad, piece of a capsicum, fried bacon and a poached egg. Season for a taste. Tastes best in a good company 🙂

      Thank you 🙂 it’s not easy to make a poached egg, for me it’s still a surprise when it works out well, hahahah. Usually the last one is for me because it’s just a yolk.

    I can think of few things more delectable than a fresh, perfectly poached egg. I’m lucky enough to have a farmer neighbor who lets me “steal” eggs. I’m so spoiled that I have to have a breakfast like yours at home — can’t order poached eggs out anymore!

      You’re one lucky girl. My grandma used to have chicken and this eggs are amazing. Much better than ones from a supermarket.
