I want to call this sandwich a super sandwich. It’s hot, delicious and contains a melting cheese. I made it three times this week and it’s only Wednesday and I want more. Tomasz wants more as well. You will need:
- two slices of bread
- butter
- 2 tsp pesto
- two slices of mozzarella cheese
- 2 slices of tomato
Spread a bit of butter on each side of each slice, then pesto on one slice (just one side that will be inside of a sandwich), cover it with mozzarella and tomato slices, spread pesto on a top slice and cover the sandwich with it. Heat a pan and fry on each side until golden brown. I covered my pan with a lid so the cheese will melt.

Hmm… yum! That’s one of my favourite to-go sandwich variations – nothing beats some melted mozzarella! The gorgeous-as-always pictures have left me with a craving, now I’ll just wait ’til tonight, when the sourdough bread is ready 😉 Thanks for sharing!Sabrina

Made it this morning! Instead of bread I used a cooked chicken breast sliced in half, and then added a drizzle of balsamic glaze – it was AMAZING.
