We’ve been on a small holiday with Tomasz and as always during the holidays time we didn’t sleep much. But of course we ate a lot. Churros with chocolate, tapas, amazing meat and sausages were our main breakfast meals. We’re back home, so it’s time for a homey breakfast. And after all that meat I felt like a goat cheese.
What you need for one person:
- 3 eggs
- 1 tablespoon milk
- 1 teaspoon chopped mixed herbs, you can choose which one you like
- 1 teaspoon of butter
- 30g diced soft goats’s cheese
- few leaves of baby lettuce
- salt and black pepper
Beat the eggs, milk, herbs, salt and pepper together. Melt butter in a pan, swirl in egg mixture and cook over a medium heat. When it formed a layer from the bottom side and is still a little runny in the center, scatter cheese and leaves over the half of the omelet.
