Blogging is all about people. People, who we manage to get in touch with and who are there with us. Life is beautiful, but sometimes each one of us has a worse day. This is when I love blogging most, as I can share a piece of me over here and then reading sweet, supportive comments is something so beautiful. This is how I met Cynthia, she left a beautiful comment under one of my posts and then she kept leaving them. Meantime, I became a mom and it was a crazy period of my life, it still is actually as Mia is soon to be 2 years old. My life has changed and there were times that I really needed support. And I got it from a lot from you and Cynthia as well.
Now it’s Cynthia’s special time, she became a mom to Luke, third tiny bowl. He’s beautiful and he will rock his parents’ world. Congratulations!
Original recipe comes from The Guardian.
You will need (for 2 people):
- 2 cups water
- 2 cups milk
- 1 cup polenta
- salt and pepper
- 50g butter
- 100g cheddar cheese, grated
- 4 small onions
- few mushrooms
- thyme
- spinach leaves
Place water and milk in a pot and bring it to boil. Add polenta, salt and pepper and mix for about 15 minute over a medium heat. Add butter and mix it in, then add grated cheddar and mix it in as well.
Place polenta in a bowl and mix in baby spinach leaves, as many as you like. Decorate with mushrooms, onions and a bit more of cheese.

Polenta for breakfast is my favorite! I usually only make it when we have leftover polenta from the night before, and I like to put an egg on it. There’s something so hearty and satisfying about it, like having dinner for breakfast!

I really need to say this… just recently I was having a terrible day, I mean a really terrible day where I questioned nearly everything about me, my life, my goals, my needs, my projects. My writing and my blogging came top of it all, making me feel really depressed and good for nothing. That precise day you left a sweet comment on my blog. You have no idea what it meant to me. You have no idea how much it did me good. So thank you very much for that on a day when I really needed it <3.
Now, as for this recipe: Polenta is my biggest frustration. WHenever I see polenta I always think it looks sooooo good, so delicious, I wanna dig in and eat. But I hate polenta. And it is frustrating, because here I am looking at these pics and drooling about them, knowing I would probably need to make it mashed sweet potatoes instead of the polenta buahahahahah!!!
