Sometimes you just need a break and a good sandwich (recipe on the end of the post)

Here comes a sandwich idea. It is too easy not to try. Choose a good bread, make tiny balls of avocado (I used ¼ measuring teaspoon to do it), slice cucumber very thin and make ribbons out of it, you can add a bit of radish. And now the best part – the sauce, because you make one and it’s called chimichurri. I made just a tiny bit of it and here is how it goes: Chop few parsley leaves, add about 1 tbsp of an olive oil, squeeze a bit of lemon, add a piece of chopped shallot, squeeze ¼ of a garlic clove, add a bit of salt, pepper and a bit of a chilli flakes. Mix everything and pour over avocado and cucumber nicely styled on your bread.

    What a fabulous place to spend a restful and meditative few days. My husband is the researcher in this home and every once in a while he can find a quaint little place for use to stay when we’re traveling. But here in the states, it’s hard – everything is so modern and cold, but like you, he keeps looking (for hours) until he finds us a nice little space. Just nothing near this rustic and warm. Beautiful post!
