I used to think that pregnancy doesn’t influance my appetite, but this morning I made baked millet with fruits, nuts and spices big enough for 4 people, so it was supposed to make it till tomorrow’s breakfast. It didn’t. We were talking with Mr T, eating, drinking our morning drinks, trying to decide on buying a new cupboard to our apartment (not an easy one) and we’ve found ourselves fighting for the last piece. I am pregnant so obviously I used this argument and won.
The honest truth is that I keep forgetting about this little girl in my belly. Last days were full of work, cooking and photographing. And… the only times I was thinking about my state was when my belly ended up in a photo frame. I got used to few poses, some of them won’t be possible soon I am afraid. But hey, I’ll figure out new ones.
As I am trying to be conscious about the whole new situation and not to read too much about pregnancy in internet (too many stressful experiences from other people), I read one website once a week. It tells me what’s going on and what I can expect in a present week. So… today I read “Enjoy your blessed state while you can, from now on it will only get worse”. Well… I don’t think so! Or will it?
Changing a subject, my small obsession with millet continues and I think it will stick around for a long time. Today I made a baked version and wow, it was worth sitting in a kitchen for an hour and wondering if it will turn out well. It was delicious. You can add milk of your choice – soy, hazelnut, almond or a regular one. You can also experiment with fruits and spices. Everything works here.
You will need (for 4 people):
- 1 cup uncooked millet
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1/8 tsp ground cloves
- 1 cup raspberries
- 1 cup blueberries
- ½ cup mix of nuts
- 1 tbsp coconut flakes
- 2 eggs
- 2 cups milk
- ¼ cup honey
It is an easy breakfast to prepare, the only extra time you need is for baking. Preheat your oven to 175*C.
In a bowl mix uncooked millet with spices and place in a medium size greased baking dish. Place berries on top and cover with nuts and coconut flakes.
In another bowl mix eggs, milk and honey. Pour it over your millet mix and with a spoon move it around a bit.
Bake for about an hour
Serve with yogurt, fruits and honey.

I love in Europe and my oven is in Crlcius but when I cook I always add ingredients by cups and spoons, not by grams 🙂
Hello! Just gorgeous and this post makes my heart full with the joy and satisfaction in the whole and simple. I attempted this this morning, and for the most part it turned out, but how much do you mix the millet with the liquid portion? I really didn’t stir it much and I think maybe that would have been best. Thank you heaps!

Shouldn’t be runny for sure. How big is your dish? And was the temperature in Celsius or Fahrenheit?

An 8×8 dish, and I did 350 Fahrenheit. It has set up quite nicely after being in the fridge all day now 🙂

Thanks for the great recipe! As I have difficulties digesting oats, I had been looking for baked millet recipes and I am glad I found this one. I was just wondering – is it possible to use other fruits, such as apples or bananas?

There is a vegan replacement for eggs, or you can just try it without eggs. It may fall apart a bit, but taste will be still the same 🙂
