There are few reasons for which my love for blogging grows each day. Obviously I experiment with food a lot and learn new things thanks to it. My belly is happy, my partner loves me even more and it’s exciting to create something out of few random ingredients. But I also meet amazing people on my way who share their knowledge. This is how I’ve learned about millet for breakfast. Do you eat it in a morning from time to time? If not – try it. It’s healthy and may be a nice quinoa replacement. You can cook it with water or milk or coconut milk or mix of them. Everything goes. Today I suggest something super easy to prepare, but it’s not the end. There will be more experiments 😉
You will need:
- 1cup millet
- 1 cup water
- 1 cup coconut milk
- fruits of your choice
- vanilla soy yogurt
- nuts of your choice
In a pot place millet, water and coconut milk, boil for about 10 minutes on a high heat and then leave it under a cover for 10 minutes.
You can serve it hot or cold, with fruits, nuts and a soy yogurt.
Enjoy, Marta
