Each day I learn something amazing. Like for example that in American recipes 1 cup is not realy one regular cup but a measuring cup. The same situation is with a tablespoon. The thing is that I am in love with some american blogs and I use their recipes quite often. Of course all this time I was using my favorite coffee cup and my soup’s tablespoon to measure. Then I’ve heard from a friend that it’s not exactly right. What can I say, I think I am an ignorant, but the good news is – it’s working well! So all of you who were living in a blissful ignorance like me, keep using you favorite cup 😉 (I hope that it won’t bite me back one day, hahaha). On the other side I love all kind of a beautiful kitchen equipment and would love to have a nice measures for cups and spoons. Maybe one day 🙂
I have some good news, I’m going to Rome today!!! I was so excited about my little trip (it’s connected to work, but as I’ve never been to Rome, I am still very excited) that I cought a cold. Or maybe it was because I spent like 3 hours riding my bike like crazy lately.
I’m treating myself good, as a sick person should and I’m trying not to kiss Rysiek too much (we don’t want him to be sick). What is the best thing a sick person may do? Eat a good breakfast. As I’m mostly in bed, I’ve asked T. to bring me some products and I made a breakfast that made me very very happy plus was supe extra delicious. I’ve found the recipe on Sprouted kitchen blog just in time. You may think that it’s complicated, but it’s not. It will take you like 10 minutes to prepare it and then just bake it. I used a mix of a frozen fruits, as I didn’t have a heart to make T. look for a fresh ones. I must also say that a lemon juice and grated zest make the taste even better. You can bake it in a ramekins or a baking dish like I did. You can also cut ingredients and make a bit less.
And just when I was about to eat it, Mr Postman broght me a new Kinfolk Magazine. Could today be any better? I feel healthier already.
You will need (for 4):
- 1 cup & 3 tbsp flour
- ½ cup traditional rolled oats
- 3 tbsp & 2/3 cup sugar
- 1 & ½ tsp baking powder
- ½ tsp salt
- 5 tbsp unsalted butter, chilled and cut into cubes
- ½ cup plain greek yogurt
- 6 cups mixed fruits
- 2 tbsp fresh lemon juice
- 1 tbsp fresh lemon zest
- cream to serve
Preheat an oven to 175*C. In one bowl combine 1 cup flour, ½ cup oats, 3 tbsp. sugar, baking powder and salt. Add butter and using your hands smash it, connecting with all dry ingredients, until you will get clumps. Slowly add the yogurt and mix it slowly.
In another bowl mix fruits, 2/3 cup sugar, 3 tbsp. flour, lemon juice and lemon zest. Mix it gently and place in a baking dish. Cover fruits with pieces of an oat mix.
Bake for about 40 minutes when using a baking dish and about 20 if using ramekins.
Enjoy, Marta
If you’re not sure it it was good – here’s my baking dish 10 minutes after it left my oven.
Today I made it simple. Everything started form a conversation and childhood memories. I don’t know if it was only Poland, but we used to have semolina for a breakfast quite often. My mum used to add a spoon of jam, so it was sweet and I loved it! You can go extreme and add a spiced strawberry sauce or maybe a home made jam if you made some this year. You may think that it’s complicated, but it’s not. It will take you like 10 minutes to prepare it and then just bake it. Lemon juice and grated zest make the taste even better.10 min40 min50 min2 servingsBreakfast

Thank you Kiran, I’m all good now. But I miss Rome, it was a good trip.
I love your style of photography. And this sounds like quite the delicious cobbler.
-
Thank you!
This is my first time checking our your site, and I really enjoyed it! The cobbler looks fantastic and I can’t wait to try it. Keep up the good work!
-
Thank you so much Rebecca. Hope to see you over here more often.
I have to admit that I’m shocked that using a regular cup has worked for you all these years! But I’m so happy it did. 🙂 This cobbler looks amazing and love the pictures! I’m really behind with the whole blogging business but I wanted to say that I hope you had a great time in Rome. I went from having two classes a week at the beginning of the October to being gone all day. 🙁 I hope to have some more time soon to get together! It’s not looking good right now, though. Anyway, hope you’re feeling better and stay out of the rain!

hey Erin, it was so much fun to make cookies with you today 🙂 I’m glad we managed to meet.
urgh I HATE how American measurements are different. But I can never be bothered working it out so just do whatever :PThis looks amazing!
-
thank you and I’m grateful you wrote it in your comment. Now I know I’m not the only one 🙂
Marta, I hope your trip to Rome was fun and that your cold didn’t stop you from eating all sorts of delicious things while you were there.I loved your story about the measuring cup and spoon. I smiled because I’m so happy when recipes are loose and not too focused on perfection. Keep on using your spoon and cup – you are making wonderful things so why mess with a good thing!xoE

hahaah, I’m glad you like it 🙂 And I will, as I still don’t have the right ones. I must tell you that I made some cookies today and it turned out well, so mu coffee cup works well.
I think American cup is slightly bigger…was it? It was a huge adjustment from gram to cup when I measure when I came to the US. It’s easy with cups but I always wonder how we can change recipe “slightly” when it’s not in gram… oh well. I hope you enjoy the trip to Rome, and this cobbler looks excellent!

it is true, but I don’t want to worry too much about it. So long it works for me 🙂 Rome was amazing, such an exciting city!
I use my favorite tea cup for essentially everything, lol—I love your “berry paint.” I would adore this for breakfast, snack, OR dessert =)

Welcome to the club Angie 🙂 And thank you for your kind words.
Ohmigoodness. There is absolutely nothing wrong with this cobbler. Nothing. Except that I didn’t have any fro breakfast this morning.

hahaha, you should taste it, it will blow your mind 🙂
I think I could easily eat this for breakfast everyday for the rest of my life :DCheersChoc Chip Uru

This is the spirit! I could do it as well 🙂
I sure didn’t know about those measurement discrepancies. Have a great time in Rome. It is my favourite city in the world and I was just there a few weeks back. We had a heat wave but I hear it’s quite a bit chillier now. Look after yourself and get well.

I had an amazing time over there! Thank you so much and the weather was just perfect.
I get confused with USA measurements too…with savoury dish it’s fine, but cakes…you need the right amount..or not??
I love how you spoon the oats mixture on top of the berries…they are so good and colourful. Rome is my hometown, I love it. Do not forget to eat in Trastevere (popular area of Rome). Have a good trip.

Thank you Rita, I had a great time in Rome. You’re one lucky girl that you can live there 🙂 For sure it wasn’t my last visit in this beautiful city. And the measurements – simply use your coffee cup 😉
Most cooks in the US are addicted to measuring by volume rather than by weight (in fact most people don’t have scales). It’s a pain for baking where measuring by weight is much easier – but US cookbooks rarely include weight measurements. So we’re stuck with an inefficient system, which makes it harder for you! Anyway, I love cobbler and this looks wonderful! Nice pictures. Hope you’re feeling better and have a nice time in Rome – great city.

I hope that one day I’ll get this measurements and will check if there’s really a difference. So far it works well with my coffee cup 🙂
So colorful… it seems to burst with flavor. I plan to try this out!

I hope you’ll like it. Let me know!

Really hope you feel better now that you are on your trip to Rome. I could eat this oat biscuit cobbler day or night!
