In February I made the most amazing road trip of my life and, obviously, my life has changed. It’s all because my 2 year old kid turned out to be the best travel companion ever and I had an unpredictable dose of fun. I also saw amazing things which inspired me in many ways. The seed was planted and now I want to do it again. I miss Miss Sunshine, road, staying overnight next to a lake or sea or in a forest, cooking in a van during a rain and read while Mia has a nap. It all is so special and I love it. And I miss it.

So now I have a new plan – I’m buying a camper van and I’ll drive around Europe with Mia. It won’t be Miss Sunshine alike, as this dream is still to come, but something more affordable, read old and not so pretty most probably. But who cares, Europe here we come! And now the reality check – did you ever try to buy a camper van? OMG, so much to know, to check, to learn about, to realise. Especially when your soon to be car is older than it should. Most probably the smartest think to do will be to buy a few books about how to fix an engine and so all the other car parts that I don’t even know exist. There is a light in this tunnel though. My dad is a pro in all cars related so I can always make a hot line with him, or FaceTime and maybe even we can fix something together on a road 😀 Fingers crossed!

And now the recipe. This is something I’ll be making on a road (you see, I already can’t stop writing about it). I made Mia drink it, most probably she thought it would be sweet, but surprisingly, she did not stop drinking. This is a truly cool recipe. I found it by accident and felt like there’s no other way than to make it. It can be breakfast, lunch, snack or even a dinner drink. I chose to have it for breakfast, because, what can I say, I like breakfasts most. It comes from one of my favourite cookbooks – Simplicious by Sarah Wilson. Have you ever heard about a morning shake made not with milk in any form but a stock? Well, trying new things is good, so just try it. Plus this one gives you a lot of energy to come up with some crazy ideas like I did.

The Recipe

YOU WILL NEED (for 2):

  • 1,5 cup zucchini
  • ½ cup frozen peas
  • ½ avocado
  • 2 cups vegetable stock, cold
  • juice of 1 lemon
  • 1 garlic clove
  • pinch of salt and pepper
  • 2 handfuls watercress
  • yogurt for serving
Place everything except from yogurt in a blender and blend it baby! Serve each glass with a tablespoon of yogurt.

      it will taste like kind of a cold soup. Very refreshing like for me. Or you can replace zucchini with sth else.

      Thank you so much, I cannot wait to post more from my trips. Or, to be honest, I can’t wait for the trip, hahahah. It is always so exciting to pack and plan all the food and so on. This time I’ll be able to pack way more than only one small backpack.

    Your story on the road trip with Mia probably inspired so many moms and dads… more than you imagined! It’s easy to think about it, feel unsure and give up before trying. You just jump out there with passion and that’s very encouraging and inspiring. You never know until you try. And now you’re hooked. Traveling around Europe sounds so fun. Do it before Mia goes to school. I feel more stuck to routines once kids started school. She’s a great eater and love that she enjoys this shake! Start young is always they key. I feed my kids green smoothies every morning too. 🙂

      I am trying to do as much as possible before school. I already think of it. I’ve been thinking that there’s so many situations when a whole family cannot travel out of many reasons but mom can but chooses not to. It is so easy plus so extremely great. I loved it so much that I want to do it over and over again 🙂

    As for the road trip. WOW! I’m jealous. Sound fabulous!
    My desk buddy from way back when bought a camper van and it seemed to be quite a full on emotional process. But she got there in the end and was so happy.

      I am excited about the trip. Finding a van is a bit complicated though. I cannot wait to close a deal and concentrating on a route.

      With Mia it was easy with shakes, maybe because I was giving her fruit ones on the beginning and then started to mix in veggies in a way that she couldn’t sense it. Now she does not know the difference. Or she likes veggies in shakes. For sure not in their original form, ups.
