I am back after a longer break due to longer vacations. I’m still a little bit jet lagged, but I will definitely post some pictures of my breakfasts in Thailand. These were not typical for sure but sooooo yummy! Today, to celebrate my reunion with Amsterdam, I made some quickies. You can prepare less than 8, just reduce the amount of cheese and mushrooms.
You will need (for 8):
- 1 cup mushrooms (sautéed with salt, pepper and red chili powder)
- 2 tbsp cream cheese
- Salt, pepper & dry basil to taste
- 8 slices of toasted bread
- butter for spreading
- ½ cup grated cheese
- 8 slices of tomato, thinly sliced
- 2 tbsp parmesan cheese
Preheat the oven to 180°C. Grease a muffin tin. Mix together the mushrooms and cream cheese and add salt, pepper & dry basil (as much as you like).
In the bread slices cut out the circles, roll them out to flatten. Make a small cut in each slice from the edge till the center and place it in the muffin cups.
Divide ¼ cup of the grated cheese among the cups. Then, spoon in the filling, and flatten it out. Sprinkle the rest of the cheese and top with a tomato slice in each cup. Sprinkle the Parmesan cheese on top of the tomatoes and a bit of basil, salt and pepper. Bake for about 25 minutes.
