Oatmeal, Honey, Chocolate Cookies

Each girl should have a jar with cookies in her kitchen. Boys love it – I could say, but we love it more and that’s the whole truth. I like to have my coffee in a cafe, just because I can grab something sweet with it. I’ve decided to bake my own cookies and make it useful during the breakfast time. If you like oatmeal with raisons, honey and chocolate, you will love these cookies with a glass of milk as well. The recipe is very simple and fast and will make you around 50 cookies, so you can enjoy it for longer.

You will need:

  • 3 ½ cup rolled oats
  • 1 cup raisins
  • 1 cup dried coconut flakes
  • 1 cup chocolate chips
  • 1 ¾ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup honey
  • 1 cup unsalted butter, melted
  • 2 tsp vanilla extract

In one bowl combine all the dry ingredients and in a second one all the wet ones. Then mix it all together. Cover with a silver foil and leave in a fridge for about 30 minutes.

Preheat the oven to 175 °C and cover a baking plate with a baking paper. And now the fun starts. Roll small bolls and place it on a paper. You want to leave some space between the balls because it will flat while baking. You will have to repeat the baking process few times, until the bowl with a dough is empty. Bake for  12-15 minutes (until just set).

    I used chopped dark chocolate instead of chocolate chips. They are so good that they have disappeared in two days 🙂

    These are really nice cookies. I didn’t have coconut on hand so I used quinoa flakes instead. Perfect. I flattened mine a little with a spoon.

    MMMmmmm!! I used chopped prunes in place of raisins for fun, spelt flour in place of regular….Oh, so delish! I love, love them!! They are a hit with the entire family and no added refined sugar-devine! Thanks for sharing 🙂

    Monica, you can try to replace the butter with 14 tablespoons of canola oil, it should work well 🙂
