We had an unexpected gusts during this weekend so I was out of computer for a couple of days. I didn’t spend much time in the kitchen either, because my lovely gusts has decided to take it over. We had some amazing Indian food, lessy with mango and oatmeal pancakes with tuna for breakfast. It was too good to keep for myself, so I’ve decided to share Agata’s recipe over here. You can make them sweet as well, just replace tuna with white cheese.
PS. How cool it is to have some people over!!!
You will need:
- 1 can of tuna
- 2 eggs
- 4 tbsp of oatmeal
- 1 onion
- 1 tsp of mustard
- olive oil for frying
Drain the tuna and add eggs, oatmeal, chopped onion and mustard. Mix until everything connects nicely. Then heat the frying pan, put a bit of oil on it and start to form small pancakes. Fry until golden brown and switch on the other side. Tastes amazing with fresh tomatoes, parsley and yogurt.
