Orange Pancakes with Caramelized Oranges and Roaster Almonds

2013 is full of walking for me and my Mr. It is fun, we’re walking for hours, talking and discovering Berlin. It could be more fun if the temperature rises over 0*C, but a gal can’t have everything. I have so many plans and resolutions for 2013 and I’m not sure if a year has enough days for all of them. Let’s hope so.

So far I’ve started to plan my trip to San Francisco, so if you have tips for me, please drop a line.

You will need for pancakes:

  • 1 cup flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 & ½ tbsp sugar
  • pinch salt
  • 1 egg
  • ¾ cup buttermilk
  • 1 tbsp unsalted butter, melted
  • ¼ cup orange juice
  • zest of 2 small or 1 big orange

For caramelized oranges:

  • 1 orange, cut in bigger pieces
  • ½ cup of sugar
  • 2 tbsp water
You will also need:
  • toasted almonds

Combine all the pancake ingredients in a bowl and combine them by mixing. If you still have small lumps, don’t worry, it’s all ok. Fry your pancakes on a medium heat, until it’s golden-brown on each side.

To make toasted almonds – cut the almonds, put it on a baking tray, sprinkle with an olive oil and bake in 220*C for about 5-10 minutes. It’s best to observe it 🙂

You want to make caramelized oranges as well, it creates the whole meal. Cut oranges in pieces, transfer it to a small pot, add water and sugar and cook on a small heat for around 10-15 minutes.

    I’m not a fan of plain pancakes–they need a little something more to pique my interest. Something like caramelized oranges! And almonds! Yum. 🙂 You will love San Francisco–it is a beautiful city with SO much to do!

    I’m certain those oranges took these pancakes over the top. What an appetizing plate! I love San Francisco, but haven’t been for a few years.     We walk everyday – at least an hour. Makes one feel so much better. But what would make me feel better right now is if I had these terrific looking pancakes to eat! Really nice. Great photos, too. Thanks.

    Yum! These look wonderful.I made pancakes with clementines last summer and added some hazelnut syrup (the kind you add to coffee) to the batter. It was delicious.If you go to San Francisco, you absolutely MUST visit the San Francisco Art Institute (located at 800 Chestnut St.) and climb the stairs to get onto the roof. It may not be entirely tourist-friendly, but the roof is a perfect view of the skyline and the city. I attached a photo I took from the roof in December 2012.
