Paleo Peach Pancakes with Bacon

Paelo breakfast may be fun.

There are big news! First one is that life is a crazy thing and 24 h after I wrote a post about how difficult it is to buy a van I got one 🙂 Second, that we’re heading to Scandinavia with Mia! Maybe Italy, Portugal and United Kingdom as well, we’ll see how it goes. I learned that Mia is the boss so I shouldn’t plan for myself while traveling with her. Yep, I do not have a plan yet, for sure I want to see moose and fiords and tiny red houses in Sweden. If you have any tips for me, please share! I cannot wait for me and Mia to travel together again and she is my favourite travel companion ever. Tomasz dropped on a second place, unfortunately, but hey, it’s difficult to beat Mia’s excitement when she wakes up in a van and welcomes it by saying “Auto, auto, hallo auto!”.

We have a friend over who strongly believes in Paleo diet. I read about it a couple of times but never paid too much attention as I don’t like restrictions (I am lucky not to have any). Marcin told me that some people complain about limited breakfast options, read ‘too many eggs’. So I started to google. I am not a pro in this died so I used one recipe that looked really yummy and was created by Caitlin from Foraged Dishes. She rocked it! I made some mix and match and I love the final effect. I’ll do some more research and will try few more options. Just for fun.

The Recipe

YOU WILL NEED (for 2):

  • few slices of bacon, I love it so I added like 8
  • 3 Saturn peaches (or 2 regular ones)
  • 1 banana
  • 2 eggs
  • 2 tbsp coconut or almond flour
  • 2 tbsp milk (regular or plant one)
  • honey for serving
Start with frying your bacon well. I like it super crispy. Dry bacon and leave about 1 tablespoon of fat for frying pancakes.

Place banana, eggs, flour and milk in a blender and blend.

Cut peaches in 5mm rings.

Place peaches in a pan with a little bit of bacon fat and pour flour mix over it. Fry on each side until golden. Serve with bacon on side and honey or maple syrup.

    Yummm this looks amazing! Just found your blog, and I agree: a good breakfast is the key to a productive and healthy day. These pancakes look like they would be good with some rum and orange zest mixed into the batter, and some caramelized onion on the side.

    woo hoo! Nice nice. I am sure Mia will enjoy this trip as well too. It’s such a blessing to find your toddlers enjoying what you like 🙂

    I don’t care much for paleo – like you, I don’t like restrictions and have none, thankfully – but I would gobble these down in a second. Woman, you are on fire with recipes lately!! Can I just say that if you do make it to Portugal, please try to visit the West Coast, try to see Óbidos, which is one of the most beautiful villages in my country, try to see the beaches from Santa Cruz to Nazaré, as to me they’re some of the most beautiful. And do overload your instagram with photos of Scandinavia, please, make a happy woman ut of me, even if vicariously!!!
