We had eggs in a bread basket and we loved it, we had pancakes with beckon and a maple syrup and it was delicious as well, so it’s time to mix everything around and create another goody.
What you will need:
- 12 strips of bacon
- 6 eggs
- pancake dough (recipe over here)
Grease 6 molds of a muffin pan and put a thin layer (around 0.5 cm) of pancake dough at the bottom of each mold. Preheat the oven to 175°C and bake the pancakes in the oven for about 3-4 minutes, until the dough is almost completely cooked.
Bake strips of bacon in the oven until they are about half done (around 5-6 minutes in 175°C). Then line two stripes of bacon around each muffin mold, crack an egg and pour it into the middle of each mold. Try to take out some of the egg white, so it will cook faster.
Bake at 200°C for about 8 minutes or until the egg whites are cooked.
